This OLS meal was perfect for a busy and late dinner Jason and I had this week. And, with only four ingredients, it’s definitely simple!
One Local Summer, meal ten: stuffed tofu, tomato cucumber salad
Stuffed and baked tofu came prepared and ready to be heated (Fresh Tofu - 25 miles), which I did first in the microwave, then on the grill press. On the side is a simple salad of diced tomato, cucumber and onion (all from Blooming Glen Farm CSA crop share - 5 miles).
This week’s meal featured four simple local ingredients: tofu, cucumber, tomatoes, onion.
I can’t believe it’s August — only a few more weeks of One Local Summer fun left!
